“I felt my lungs inflate with the onrush of scenery — air, mountains, trees, people. I thought, ‘This is what it is to be happy.'”― Sylvia Plath
Around 7 A.M. on a Saturday morning, we departed Brooklyn, made a quick stop at Brooklyn Bagel & Coffee Company in Astoria for coffee and egg sandwich bagels to-go, and then off we were, headed upstate New York– blue skies, crisp air, and a good sweat ahead.
Planning Your Hike
We began our hike at Inspiration Point followed by a trail to Kaaterskill Falls. The terrain covered was absolutely exhilarating and if you’re looking for stunning views outside of the city with moderate crowds, I’d suggest an early morning hike to Inspiration Point!

I’m usually skeptical when it comes to (1. diners and (2. high rated and reviewed establishments. It’s rare to come across a diner that serves up quality, tasteful ambience and food! I’ve learned from my travels that sometimes the highly rated establishments can be tourist traps that curtail quality and customer service… but I digress. Phoenicia Diner hit the mark: the food was exceptional, the ambience and customer service were fantastic!
What I’m assuming used to be a parking lot was reworked into outdoor dining space featuring distanced picnic tables and umbrellas and lush landscape pairing. The staff were masked and ensured that customers were as well, prior to settling in for dining.
Just a heads up, if you are vegan or vegetarian you might have difficulty finding many options. I ordered the avocado toast with hardboiled eggs and was not disappointed. Phoenicia Diner displayed delectable cuisine which catered to my picky tastebuds.
